Yummy, yummy, yummy!

Well hello Beautiful! :)
What I made this time was Carrot Cupcakes! Yummy! I usually do not like carrot cake at all, but I have to say, this was pretty good, still don't like carrot cake tho. :p I only got one, but that's okay, my daddy gave some to his co-workers and they loved them too! I was soo happy to know that other people besides my mommy and daddy liked them! :)
The Ingredients for this week:
10 tablespoons of lightly salted butter
3/4 cup packed light brown sugar
3 eggs
1 1/4 cups self-rising flour
1/2 teaspoon baking powder
1 teaspoon ground allspice
1 cup ground walnuts
finely grated zest of 1 orange (This we did not do)
1 1/3 cups of grated carrots
1/3 cup golden raisins
Of course you'll need utensils, like measuring cups, bowls, and all that stuff but I'm sure you'll know what you need from looking at the ingredients. :)
 Ingredients!
The little box of raisins, I used five and we got those from Fred Meyer in a pack.
That little bowl is the allspice.
Now, lets get mixing! :D
OH! The oven should be set to 350 degrees! :)
I don't know what I was doing, but my bowl has a cupcake!
 Had to soften the butter.
 Packing the brown sugar.
 Mixing. :)
 Mixing some more.
 Adding the eggs.
Mixing the added eggs. (I colored on my arm the day before and it hadn't washed off. d:)
Eggs make it hard to mix ingredients sometimes.
 Finally.
 It's raining flour!
 1 1/4 cups of flour!
 More mixing!
It's starting to look really good.
 Baking powder.
 Mixed just a lil.
Allspice, looks like a cinnamon toast thing. :)
 Mix.
Walnuts, I used a magic bullet to ground them up & it went a little out of control but it was still okay.
Mixing, but it smells really good.
 Carrots!
 Mix.
You gotta make sure you mix it really good, but of course you can use a mixer and not your own power. d:
 Raisins.
Try to get it as nice and smooth as possible.
Pop those in the oven for 25 minutes and while we wait we can do the frosting. :)
There is actually a recipe for this one, we're not just free handing it.
What you'll need:
1/2 cup whole-fat cream cheese
2 1/4 cups confectioners sugar
1 tablespoon lemon juice
chopped walnuts, to decorate

This was a great cream cheese frosting!
 Powered sugar and cream cheese.
 Same.
 Lemon juice.
 Vanilla.
 Mix all together.
 Feel the burn.
 Oh yumm!
 Looks great!
My mommy and I, well mom, wanted not only walnuts, but on some to have little frosting carrots like on the actual cake! Great idea, so all you need to do its take some frosting and put them in separate bowls and add the food coloring. When that's done, I believe she piped it out and in order to do that you need plastic baggies. Scoop the frosting in and try to get it in one corner, after cut a small piece off so that when you squeeze something comes out, then you can pipe little carrots!
Oh gosh, cupcakes! Get them!
Ohh yeahh, now that is what I like to call perfect!
 Looks so creamy!
 Mmmmmmmm!
Final product!
I love the carrots mom!
These were really good and I hope you enjoy them also!
Love,
Cupcake.
